Oysters A La Bookbinder

12 medium oysters
1 large mushroom -- finely chopped
1 teaspoon onion-minced
3 tablespoons butter
1 teaspoon flour
1/2 cup milk-warm
1/4 cup oatmeal-cooked
1 teaspoon salt and pepper
1 tablespoon parsley-minced
3 tablespoons parmesan cheese-grated

Preparation / Directions:

Wash and shuck oysters, putting them on the half shell. Sauté the mushroom and onion in 1 tbs. butter until soft but not browned. Add flour and stir to blend. Add milk and stir until thickened. Add oatmeal and stir well. Season to taste with salt and pepper. Stir in parsley. Place oysters under broiler for 4 minutes Remove and cover each oyster with some sauce. Sprinkle with Parmesan cheese. Melt 2 tbs. butter and drizzle a few drops over oysters. Return to broiler and cook for 5 minutes or until browned.
