Vermouth Oysters

Ingredients:


18 medium live oysters

1/4 cup dry vermouth

1 cup onion

1 medium lemon

6 pieces black peppercorns

1/4 teaspoon mustard seed

1 piece bay leaf

1/4 teaspoon salt
 

Preparation / Directions:


Remove oysters from shell, reserving liquor combine oysters and liquor in a saucepan, over a medium flame heat until edge of oysters begin to curl remove oysters to a bowl, with a slotted spoon continue to heat liquor until reduced to 1/2 cup remove from heat stir in vermouth and allow to cool combine oysters, slivered onions, lemon slices, peppercorns, mustard seeds, and bay leaf season to taste with salt stir in vermouth mixture cover and chill for 3-4 hours serve slightly chilled
