Shinnecock Flounder Fillets Epicure

6 fillets flounder fillets
1/2 pound firm white mushrooms
1 1/2 pounds p. chives -- chopped
2 tablespoons p. lemon juice
1 cup light cream salt and pepper to taste
1/8 teaspoon nutmeg -- grated
1 dash cayenne pepper
3 tablespoons p. butter paprika

Preparation / Directions:

Arrange fillets in a buttered baking dish, cover with sliced mushrooms. Sprinkle with lemon juice and chives. Season cream with salt, pepper, nutmeg and cayenne. Pour cream over fish and bake at 350 degrees F. for I5 minutes. Remove from oven, sprinkle with paprika and brown quickly under the broiler.
