1 pound uncooked shrimp -- shelled and butterflied
3/4 cup madeira wine
2 teaspoons shallots
1 stick butter/margarine
2 teaspoons parsley
1 teaspoon lemon juice

Preparation / Directions:

Butterfly shrimp by splitting each one almost in two. Melt butter in fry pan. Saute shallots. Add shrimp and cook until pink. Stir in lemon juice, parsley and Madeira. Bring to a boil and cook until wine is reduced. Serve in a dish with lemon wedges. Can be kept warm on hot tray.
