Quick Pickled Herring

Ingredients:


2 fillets holland herring

1 small onion -- sliced

8 small peppercorns

4 whole cloves

3/4 cup vinegar

1/2 cup sugar

1 tablespoon chopped parsley or fresh dill
 

Preparation / Directions:


Clean and soak herring in cold water 24 hours, changing water 2 or 3 times. Remove skin and bones. Rinse and drain fillets. Cut fillets into bitesize pieces and arrange attractively in shallow serving dish. Sprinkle peppercorns and cloves on top. Cover with onion slices. Combine sugar and vinegar in a bowl. Mix well. Pour vinegar mixture over herring. Place in refrigerator about 8 hours before serving. Garnish with parsley or dill.
