1 quart scallops
1 Cup fine dry bread crumbs
2 large eggs -- beaten
1 teaspoon pepper -- (if desired)
2 Cup deep fat for frying
1 teaspoon salt

Preparation / Directions:

Immerse scallops for 3 minutes in cold salted water (1 tablespoon salt to each cup of water). Drain thoroughly. Roll in bread crumbs, then dip into beaten egg seasoned with pepper and again, roll in crumbs. Place one layer deep in a wire frying basket and lower into deep fat heated to 375 degrees. Fry about 4 minutes or until richly browned and tender. Drain and serve hot. Makes 5 servings.
