Preparation / Directions:
In a saucepan melt butter on medium heat. Add onions, green onion, garlic, celery, bell pepper, and simmer 5 minutes. Add flour a little at a time, stirring until all mixed. Cook 5 more minutes stirring constantly (make sure no flour sticks). Add whipping cream and stir as you slowly add all 1-1/2 cups. Add 1# cream cheese and blend until melted. Cook until mixture thickens. about 4-5 minutes. Stir in salt, pepper, egg yolks and stir. After 1 to 2 minutes add bread crumbs. Take off heat and fold in crabmeat and 1/2 of the cheddar cheese until mixed well. (Try not to break up the crab too much). Put in a greased baking dish and spread remaining cheese on top. Bake uncovered in a 350 degree oven for 20 minutes or until cheese begins to brown. Serve.
