Crab Thermador Bake

1 pound crab legs
1/4 cup chicken stock
1/4 cup heavy cream
1/2 cup mild shredded cheese
4 tablespoons melted butter
2 tablespoons flour
1 tablespoons chopped chives
1 dash white pepper
3 tablespoons white wine

Preparation / Directions:

Preheat oven to 400 degrees. steam crab legs till done. snap legs and take out meat and cut into 1 inch pieces . Then mix with cheese and chives and place in 16oz. casserole dish. Heat chicken stock and cream in small pot over medium heat. Make roux with melted butter and flour. Add to chicken stock and cream while stirring constantly. Cook until sauce is thick and creamy, add wine and white pepper. Pour sauce over crab meat then bake at 400ƒ for 10-12 minutes or until crab is warm and cheese is melted. (Serves 2)
