Banana Nut Chocolate Chip Scones

Ingredients:


3 cups all-purpose flour

1/2 cup packed brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

3 tablespoons butter -- chilled

1/4 cup buttermilk

1 teaspoon vanilla extract

2 large egg whites

1 cup banana -- mashed

1/2 cup chocolate chips

1 spray vegetable cooking spray

1/3 cup walnuts -- coarsely chopped

1 tablespoons brown sugar
 

Preparation / Directions:


Preheat oven to 400 degrees F. In a large mixing bowl, combine flour, sugar, baking powder, salt , and baking soda. Cut in butter with a pastry blender until the mixture resembles coarse meal. Set aside. In a medium bowl, mix buttermilk, vanilla, egg whites and banana. Add wet mixture to dry mixture just until combined. Mix in chocolate chips. Turn dough out on a lightly floured surface. Knead lightly. Spray a large cookie sheet with vegetable cooking spray. Pat the dough into a 9-inch circle on the cookie sheet. Sprinkle the walnuts and brown sugar over the dough, pressing gently into the dough. Cut the dough into 12 slices. bake for 20 minutes.
