Plum Tomato Salsa With Sherry Vinegar

Ingredients:


6 medium plum tomatoes -- peeled seeded -- and cut into 1/2 inch dice

1 medium shallot -- sliced thin

1 medium serrano chile -- seeded and sliced thin

2 tablespoons sherry vinegar

1/2 cup olive oil

1/2 teaspoon chopped fresh thyme -- or

1/4 teaspoon dried

1 tablespoon chopped fresh cilantro

1 tablespoon chopped fresh parsley

1 teaspoon salt and ground black

1 teaspoon pepper to taste.
 

Preparation / Directions:


Mix all ingredients together in medium bowl. Serve within 2 hours.
