Sweet Cherry Ice Cream Sauce

Ingredients:


6 tablespoons water -- divided

1/4 cup light corn syrup

2 tablespoons cornstarch

1 tablespoon fresh lemon or lime juice

2 cups northwest fresh sweet cherries -- pitted and quartered

1/2 cup sugar
 

Preparation / Directions:


Makes about 2 cups 1. Combine cherries, sugar, 1/4 cup water and corn syrup in saucepan. 2. Blend cornstarch with remaining water; add to cherry mixture. 3. Cook over low heat, stirring constantly, until thickened; stir in lemon juice. 4. Chill. NOTE: For a variation, alternate layers off ice cream and Sweet Cherry Ice Cream Sauce in parfait glasses. Serve immediately, topped with whole fresh cherries, if desired.
