Peanut Dipping Sauce

Ingredients:


2 cloves garlic -- minced

1/2 small onion -- chopped

2 tablespoons fresh lime juice

1 tablespoon brown sugar

1/2 teaspoon curry powder

1/2 teaspoon crushed hot red pepper flakes

3/4 cup peanut butter

3/4 cup canned coconut milk
 

Preparation / Directions:


In a food processor or blender, combine garlic, onion, lime juice, brown sugar, coriander, and hot pepper flakes. Process until garlic and onion are finely chopped. Add peanut butter and coconut milk. Process until smooth. Serve at room temperature. Store covered in the refrigerator.
