Ingredients:


12 medium Peaches Firm, Halved And Pitted

3 medium Sweet Peppers, Seeded And Quartered

1 Large Onion, Halved

3/4 Cup Cider Vinegar

3/4 Cup Sugar

1/2 Clove Garlic, Minced

1/2 Teaspoon Salt

1/2 Cup Raisins

1/2 medium Naval Orange, Quartered

1/2 medium Lemon, Seeded And Quartered

1/8 Cup Chopped Crystalized Ginger

1/2 Teaspoon Ground Ginger
 

Preparation / Directions:

Heat 1/2 cup vinegar and sugar in an 8-quart pot over medium heat. Bring mixture to a boil, reduce heat and simmer 10 minutes. Add peaches, peppers, onions, garlic salt, and raisins to pot. Simmer, stirring frequently, for 10 minutes. Assemble and attach food grinder using coarse grinding plate. Turn to speed 4 and grind orange and lemon. Add ground fruit and crystallized ginger to pot; simmer 30 minutes, stirring occasionally. Add remaining vinegar and ground ginger to mixture. Simmer 1 hour or until thick, stirring occasionally. Ladle mixture into hot sterilized jars and seal. Process 15 minutes in boiling water bath. Remove jars from bath; cool and check seals.
