Maria's Red Chile Sauce

Ingredients:


1/2 cup vegetable oil

1 cup red new mexico chile powder

2 tablespoons flour -- sifted

6 cups water

1 teaspoon salt

2 cloves garlic -- minced
 

Preparation / Directions:


In a large saucepan place the oil and heat it on medium until it is hot. Add the chile powder, 1 tablespoon at a time, while whisking constantly, until all of the chile powder is dissolved and a paste is formed. Add water as needed to maintain a pasty consistency. Add the flour and whisk it for 3 to 4 minutes, or until the entire mixture thickens. Add the water, salt, and garlic, and whisk them in. Simmer the sauce for 1 hour. Stir occasionally so that it doesn't cake on the bottom of the pan. Notes: This recipe is from Maria's New Mexican Kitchen in Santa Fe which is typical of an old Mexican style cantina. Maria's is a rambling adobe building, complete with a view of fresh tortillas being made in the main dining room.
