Jamaican Jerk Sauce 2

Ingredients:


2 Large shallots -- minced

2 Cloves garlic -- minced

1 Tablespoon minced peeled fresh ginger

6 medium scallions -- green part only, sliced

1/2 medium habanero (scotch bonnet) chile -- ribs and seed removed -- minced

1 Tablespoon ground allspice

1 Teaspoon freshly ground black pepper

1/4 Teaspoon cayenne pepper

1 Teaspoon ground cinnamon

1/2 Teaspoon gound nutmeg

1 Tablespoon fresh thyme leaves OR 1 Teaspoon dried

1 Teaspoon coarse salt

1 Tablespoon packed dark brown sugar

1/2 Cup orange juice

1/2 Cup red wine vinegar

1/4 Cup soy sauce

1/4 Cup olive oil
 

Preparation / Directions:


great for chicken and pork + ribs, too! **HOT**HOT**HOT 1. Combine shallots, garlic, ginger, scallion greens and chile in small bowl. Set aside. 2. In another bowl, combine the spices, thyme, salt and sugar. Whisk in OJ, both vinegars and soy sauce. Slowly drizzle in the olive oil, whisking constantly. Add shallot mixture and stir to combine. Let rest at least 1 hr. before using as marinade.
