Grilled Gouda, Salami, And Artichoke Heart Sandwiches

Ingredients:


1/4 cup chopped gouda

2 tablespoons finely chopped sliced genoa salami

3 tablespoons drained marinated artichoke hearts -- finely chopped

4 slices homemade-type bread -- crusts removed

2 tablespoons unsalted butter
 

Preparation / Directions:


In a small bowl stir together the Gouda, salami, and the artichoke hearts and divide the mixture between 2 slices of the bread, spreading it evenly. Top the mixture with the remaining 2 slices of bread and press the bread together gently to enclose the filling. In a skillet melt 1 tablespoon of the butter over moderate heat and cook the sandwiches for 1 minute, or until the undersides are golden. Add the remaining 1 tablespoon of butter, turn the sandwiches, flattening them slightly with a spatula and cook them for 1 minute more, or until the undersides are golden. Transfer the sandwiches to a cutting board and cut each sandwich in two.
