Chunky Lobster Rolls

Ingredients:


1 1/2 pounds cooked lobster meat -- cartilage removed

3 cloves garlic -- minced

1/2 cup low-fat mayonnaise

1/2 cup sliced celery

1/2 cup minced scallions

1 tablespoon lemon juice

1 cup shredded romaine lettuce

6 pieces whole-wheat pita bread halves -- or whole-grain hamburger rolls
 

Preparation / Directions:


Mix together the cooked lobster with all ingredients except the lettuce and bread. If using pita bread, stuff ingredients into the pocket and serve. If using hamburger rolls, scoop out some of the bread on one side of each roll to form a pocket. Place shredded lettuce in the hole. Pile on the lobster salad and top with remaining roll half. 6 servings/Serving size: 3 oz
