pan grilled Burritos

Ingredients:


1/2 pound ground beef

1 tablespoon chilli powder

1 teaspoon cayenne pepper

2 tablespoon ketchup

1 teaspoon corn starch disolved in 1 tsp. water

1 can pinto beans

1 tablespoon garlic chopped

1 medium onion chopped

1 medium avacado mashed

1/2 cup fresh cilantro chopped

1 cup grated jack cheese

4 tortillas 8 inch soft flour tortilla wraps

1 jar salsa and sour cream to serve
 

Preparation / Directions:


beef mix: In a large skillet brown half onions and ground meat on med high heat. Drain fat. Add chilli powder, cayanne pepper and ketchup to the meat simmer for a few minutes add cornstarch and stir remove from heat and add 1/2 cilantro. refried beans: in a small skillet cook remainder of onion and garlic on med. Do not let them brown. They should be tranlusent. then add the whole can of pinto beans juice and all. Raise heat to med high and continually mash beans with the back of a spoon as they cook. when done you will see no full beans and it will have the consistancy of paste. 10 mins Burrito: assemble buritto's, spread avacado in a line up the middle of the tortilla then the meat then the beans then sprinkle cheese and cilantro. Be careful to leave one edge free so you can roll it up. you can serve as is or grill it in a pan with butter so the outside is crispy. If serving to kids i leave the cayenne pepper out
