Ingredients:
1 bunch cilantro -- chopped |
1 teaspoon oil |
1 teaspoon vinegar |
1 teaspoon pepper |
1 teaspoon salt -- or to taste |
1 medium white onion -- chopped |
6 medium green chiles -- roast, peel, chop |
6 medium ripe tomatoes -- chopped |
2 cloves garlic |

Preparation / Directions:
Mash garlic in a wooden salad bowl. Add remaining ingredients, including cilantro, if desired, and toss.
Chill before serving.
Yield: 2 cups
