Tartar Of Smoked Salmon On Rye Barquette

Ingredients:


1 pound smoked salmon minced by hand

1 tablespoon capers

1 medium lemon only -- juice of

1 teaspoon minced onion

1 large egg white

1/2 teaspoon fresh chives finely chopped

30 pieces barquettes-boat shaped pastry
 

Preparation / Directions:


Mix well minced salmon, capers, lemon juice, onion, egg white and chives and portion into 30 equal parts. Top barquettes and serve. If barquettes are not available, use round 1 inch croutons or similar cracker as base.
