Salmon Steaks with Sorrel Sauce

Ingredients:


2 fillets salmon steaks -- 8 ozs each

1 teaspoon olive oil

1 tablespoons butter

2 small shallots -- minced

2 ounces dry white wine

3 tablespoons heavy cream

3 1/2 ounces fresh sorrel leaves, washed and dried

1/4 teaspoon salt and pepper

1/4 teaspoon fresh sage for garnish
 

Preparation / Directions:


Season salmon steaks with salt and pepper. Brush a non-stick frying pan with oil. In a small saucepan, melt butter over n=medium heat and fry shallots, stirring frequently, until just softened. Add wine, reduce by 1/2. Add cream and sorrel to shallot and cook until sorrel is completely wilted, stirring constantly. Meanwhile heat frying pan over medium-high until hot. Add salmon steaks and cook for about 5 minutes , turning once until flesh is opaque next to bone. . Arrange salmon steaks on tow warmed plates, garnish with sage and serve with sorrel sauce.
