Salmon Divan

Ingredients:


40 ounces frozen broccoli

1/4 cup butter or margarine

1/4 cup all-purpose flour

1 teaspoon salt

1/4 teaspoon pepper

2 1/2 cups hot milk

2 tablespoons sherry

4 cups salmon -- in chunks

1/4 cup grated parmesan cheese

1 tablespoons fine dry breadcrumbs
 

Preparation / Directions:


Cook broccoli according to package directions. Drain and put in shallow 2 quart baking dish. Melt butter and stir in flour, salt and pepper. Add milk. Cook over moderate heat, stirring constantly, until mixture is smooth and thickened. Remove from heat and stir in sherry. Top broccoli with salmon chunks. Pour sauce over salmon. Combine parmesan cheese and bread crumbs. Sprinkle over sauce. Bake in a preheated oven (450 F) for 15 to 20 minutes or until golden-brown and bubbly. Makes 8 to 10 servings.
