Ginger's Salmon Patties

The patties can be fried or baked. Good served hot or cold Sauce Recipe Included
 

Ingredients:


---Patties:

1 Can Canned Salmon - drained

1 medium Onion - chopped

1 Cup Mixture of 2/3 Corn Meal and 1/3 Flour

2 large Egg - beaten

1 teaspoon salt and Pepper

3 Cup oil - if frying

---Sauce:

4 large Boiled Eggs - chopped

1/4 Cup Butter

1 Cup Flour

1 Cup Milk

1 teaspoon salt and Pepper to taste
 

Preparation / Directions:


PATTIES:Drain 1 - 2 Cans of Salmon..Add to meal and flour mixture along with egg, onion, salt and pepper..Mix til it all sticks together...Roll in a little corn meal and cook... These can be fried in a little oil( fry til brown and turn over and fry the other side ) or baked ( bake about 30-45 minutes on 350 )...SAUCE: Boil your eggs and chop ( set aside ) In a heavy skillet blend butter and flour over low heat then add milk slowly, stirring constantly..add salt and pepper and boiled eggs just before taking off the heat ( should be the consistency of medium thick gravy before removing from heat ).
