Calypso Bean Salad on Greens

Ingredients:

2 tablespoons fresh lime juice
1 tablespoons olive oil lemon flavored
1 clove garlic minced
1/2 teaspoon salt
16 ounces black beans rinsed and drained
8 ounces cannellini beans rinsed and drained
1 1/2 medium red bell pepper seeded and chopped
8 medium scallions chopped
1/4 cup cilantro chopped
6 cups lettuce leaves torn
 

Preparation / Directions:

1. To prepare dressing, in large bowl, combine lime juice, olive oil, garlic and salt; stir to mix well.

2. Add black and cannellini beans, peppers, scallions and cilantro to dressing; toss to mix well.

3. Let stand 30 minutes. Divide lettuce evenly between 12 plates and top each with 1/2 cup beans. Serve at room temperature or chilled.
