Greek Tomato Salad

Ingredients:


6 tablespoons lemon juice

2 cloves garlic, minced

2 teaspoons kosher salt

1 cup greek extra virgin olive oil

1 teaspoon oregano

1 teaspoon black pepper to taste

1 cup greek olives

1/2 Cup feta cheese, crumbles

2 medium english cucumbers, cubed

2 medium tomatoes, halved

1 small red onion, sliced
 

Preparation / Directions:


In a small bowl, wisk together lemon juice, garlic, salt, oil, oregano, and pepper. Set aside. Put olives, cheese, cucumbers, tomatoes, and onion in another bowl. add dressing and marinate for at least two hours.
