Tropical Rice Salad

Ingredients:

1 1/4 cups Watkins Harvest Treasures East West Rice Medley
2 tablespoons Watkins Chicken Soup Base
1 medium ripe tomato -- seeded and finely chopped
1 small ripe papaya -- peeled, seeded and coarsely chopped
2 tablespoons finely chopped red onion
2 tablespoons Watkins Tropical Salsa
1 teaspoon Watkins Cilantro
1 teaspoon Watkins Cumin
1 teaspoon salt and Watkins Black Pepper -- to taste
 

Preparation / Directions:

Cook rice per package directions, adding the Chicken Soup Base to cooking water. After rice is done cooking, rinse with cold water and let drain well. Place rice and remaining ingredients in large bowl; mix well. Refrigerate at least 1 hour to allow flavors to develop. Makes 6 servings.
