Red Salad

Ingredients:


1 head red leaf lettuce

1 head radicchio

1 medium red onion

1 1/2 cups red cabbage

1 cup cooked beets

1 medium red apple

---VINAIGRETTE---

3 tablespoons walnut oil

2 tablespoons olive oil

2 tablespoons red wine vinegar

1 tablespoon balsamic vinegar

1 teaspoon dijon mustard

1 tablespoons sugar

1 teaspoon salt and black pepper
 

Preparation / Directions:


Mix red leaf and radicchio together in salad bowl. Add onion, cabbage, beets and apple and toss together. To make vinaigrette: Mix together walnut and olive oil, red wine and balsamic vinegar, mustard, sugar, salt and pepper, whisking to blend. Pour vinaigrette over salad and toss gently. Approximately 4-7 minutes.
