Piatti Mixed-Greens Salad With Cherries

Ingredients:

---DRESSING---
1/2 cup sun-dried cherries -- divided
2 tablespoons hot water
1/4 cup red wine vinegar
1 tablespoon dijon mustard
1 teaspoon sugar
1 teaspoon salt and pepper -- to taste
3/4 cup extra virgin olive oil
---SALAD---
1 pound mixed greens
1/2 pound pancetta or bacon -- cooked crisp, and -- crumbled
1/4 pound bleu cheese -- crumbled
1/4 pound toasted hazelnuts -- chopped
 

Preparation / Directions:

For the dressing, combine 1/4 cup of the cherries with the hot water and let stand for 10 minutes. Add the soaked cherries and all of the dressing ingredients except the olive oil to a blender and puree. With the motor running, slowly add the oil. For the salad, combine the mixed greens and dressing. Divide among 6 salad plates. Top each plate with the remaining dried cherries, pancetta or bacon, bleu cheese and hazelnuts.
