Jalapeno Bean Salad

Ingredients:

1 pound white beans -- dried
2 tablespoons garlic
3 tablespoons jalapeno chile
2 cups cilantro leaves
1/2 cup fresh lemon juice
1 cup corn oil
1 pound green beans
 

Preparation / Directions:

Combine the black beans and water to cover in a saucepot, over a high flame bring to a boil, simmer for 5 minutes, remove from heat, cover, allow to stand for 1 hour drain, rinse with cold water, and drain well add 4 cups hot water, return to the heat, and allow to simmer until almost tender drain, rinse in cold water, and drain well repeat process with the white beans or prepare concurrently in a different pot (as they both cook at different rates) combine the garlic, chiles, cilantro, lemon juice, and oil in a food processor process until well blended combine black beans, white beans, green beans, and dressing mixture- toss to mix well serve slightly chilled or at room temperature
