Italian Vegetable Salad

Ingredients:


2 quarts mixed salad greens

8 ounces mozzarella cheese -- cut into strips

6 ounces artichoke hearts in oil -- drained and halved

1 cup pitted ripe olives

1 medium red onion -- sliced

1 medium tomato -- cut into wedges

1/3 cup roasted red peppers -- cut into strips

1/2 cup wish-bone italian dressing

2 tablespoons grated parmesan cheese -- (optional)
 

Preparation / Directions:


In large salad bowl, combine all ingredients except Italian dressing and cheese; cover and chill. Just before serving, toss with dressing and cheese. Makes about 8 side-dish servings. Also terrific with Wish-Bone Fat Free or Lite Italian Dressing.
