Preparation / Directions:

I roasted the peppers over a burner on my gas stove. I put them in a plastic bag to cool. This helps make them easier to peel. When cool, I seeded and peeled them. I used one pepper for the Polenta dish. The remainder I cut into strips, added 1 clove minced garlic and some extra virgin olive oil. This will be served as a side dish.
