Hot Avocado Salad

1 head romaine lettuce -- chopped
1 teaspoon mustard powder
1 tablespoon white wine vinegar
1 tablespoon olive oil
2 teaspoons chopped fresh basil
1 teaspoon salt and black pepper to taste
4 medium scallions trimmed and chopped
4 ribs celery -- diced
1 medium green pepper -- seeded and diced
1/2 medium avocado -- peeled and diced
1/2 medium cucumber -- peeled and diced

Preparation / Directions:

Tear lettuce and place in large bowl. Mix together mustard, vinegar, olive oil, basil, salt and pepper. In skillet with hot oil, saute scallions, celery and green pepper. Add avocado and cucumber to skillet. Add vinaigrette to skillet. Pour skillet mixture over lettuce in bowl. Toss. Serve warm. Approximately 7 minutes.
