Citrus, Avocado and Bacon Salad

3 Tablespoons orange juice concertrate -- thawed
2 Tablespoons vegetable oil
1 Tablespoon lime juice
1 Tablespoon honey
1 Tablespoon white vinegar
3 Cups mixed salad greens -- washed and drained
1/2 medium avocado -- peeled, pitted and sliced
6 Slices Armour lower salt bacon -- cut in half and cooked crisp
1 Can mandarin oranges -- (11 oz.) drained

Preparation / Directions:

Combine orange juice concentrate, oil, lime juice, honey, and vinegar in small bowl: set aside. Divide mixed salad greens evenly between 2 individual salad plates. Arrange avocado and bacon spoke-fashion over greens. Arrange the mandarin oranges on top of greens. Drizzle with dressing. Garnish with chopped unsalted peanuts if desired.
