Citronette Dressing

Ingredients:


1/2 cup fresh lemon juice

1 1/2 cups olive oil

4 cloves garlic -- peeled and minced

1/2 tablespoon dijon mustard

1/2 teaspoon salt

1/2 teaspoon pepper
 

Preparation / Directions:


Whisk all the ingredients together. Adjust the seasoning to taste. Makes 2 cups. Notes: Citron is the French word for lemon. We use it in our standard "house" dressing on our mixed green salad and on other salad specials from time to time. Lemon is milder than vinegar and therefore is less likely to clash with a wine served during the salad course. The dressing can be made in moderate quantities and kept in the refrigerator for use during the week.
