Chrysanthemum Greens With Sesame Dressing

Ingredients:


1/2 cup toasted sesame seeds

1/2 cup dashi soup stock

1 teaspoon mirin

1 tablespoon soy sauce

1 dash salt

1 bunch chrysanthemum greens

1 teaspoon sesame seeds -- garnish
 

Preparation / Directions:


Dressing: Grind in a mortar or process in a food processor: sesame seeds, dashi soup stock, mirin, soy sauce and salt. Wash and trim the chrysanthemum greens. Bring a pot of water to a boil. Plunge the greens into the boiling water for about 30 seconds. Remove them from the hot water and immediately plunge them into cold water to stop the cooking process and fix their color. Remove them from the water and squeeze ou excess liquid. Toss the greens with the dressing. Cover and place in the refrigerator for a couple of hours. Divide the greens among 4 bowl and pour any remaining sauce over them. Top them with a sprinkle of sesame seeds.
