RICE-PEA SALAD

Ingredients:


3/4 cup uncooked regular rice

1/3 cup frozen English peas

3/4 cup chopped celery

1/3 cup mayonnaise

2 tablespoons minced onion

1 teaspoon lemon juice

1/4 teaspoon salt

1/4 teaspoon white pepper

1 bunch Lettuce leaves -- (optional)

1 jar Pimiento strips -- (optional)
 

Preparation / Directions:


Cook rice according to package directions, omitting salt; set aside. Cook peas according to package directions, omitting salt and butter; drain, reserving 3 tbls. liquid. Combine rice, peas, and celery; chill. Combine reserved pea liquid, mayonnaise, onion, lemon juice, salt, and pepper, mixing well. Toss with rice mixture. If desired, serve on lettuce leaves, and garnish with pimiento strips.
