this lemon rice is a popular south Indian LUNCH-BOX ITEM .Easy to prepare and does not require refrigeration for 12 hours.after preparation.it is served in picnics, and parties for lunch or dinner.
 

Ingredients:


1 CUP RICE

2 cups WATER

1 teaspoon MUSTARD

1 medium GREEN CHILLIES

1/2 teaspoon CUMIN SEEDS

1/2 teaspoon SALT

1/2 medium LEMON JUICE

8 pieces CASHEW NUTS

1 cup INDIAN CURRY LEAVES

1 tablespoons OIL

1/4 teaspoon TURMERIC POWDER
 

Preparation / Directions:


1.COOK BASMATI OR SONAMASURI RICE IN WATER FOR 25 MINUTES 2.COOL.RICE WILL BE SEPARATE GRAINS WITHOUT STICKY 3.BEAT OIL FOR SEASONING. 4.ADD MUSTARD. WAIT TILL IT SPLUTTERS. 5.ADD CUMIN,CUT CURRY LEAVES, CUT GREEN CHILLIES,CASHEW NUTS 6.ADD TURMERIC AND FRY FOR 30 SECONDS 7.ADD SALT TO THE RICE AND POUR THE SEASONING OVER.THE RICE. 8.ADD LEMON JUICE AND MIX THOROUGHLY; 9.LEMON RICE IS READY. 10.SERVE WITH GRATED CARROTS AND CUCUMBERS TOPPED WITH CURDS.
