Chicken Wild Rice Salad

Ingredients:


2/3 cup mayonnaise

1/3 cup green onions -- finely chopped

1/3 cup milk

1 can sliced water chesnuts 8 oz. -- drained

2 tablespoons lemon juice

1/2 teaspoon salt

1/4 teaspoon dried tarragon leaves

1/8 teaspoon pepper

3 cups chicken -- diced

1 cup seeded grapes, halved

3 cups wild rice -- cooked

1 cup salted cashews
 

Preparation / Directions:


Blend mayonnaise, milk, lemon juice, and tarragon leaves; set aside. In large bowl, combine chicken, wild rice, green onion, water chesnuts, salt and pepper. Stir in mayonnaise mixture until blended. Cover and refrigerate up to 3 hours. Just before serving, fold in halved grapes and cashews. Garnish with grape clusters.
