The Sultans Turban - Rice and nut Savarine with Kumquats

Ingredients:


1/4 pint rice long grain

1/2 pint vegetable stock -- make a pilaf

2 ounces mixed nuts -- washed and blanched

1/4 pint vinegar

4 ounces sugar -- reduction/ vinegar

4 ounces kumquats -- cut in quaters

4 ounces soyaflour
 

Preparation / Directions:


Make a pilaf of rice, by cooking the rice in the oven 250c for 40 mins untill the stock is all obsorbed, in aheat proof dish covered .with geased paper and a lid add a little seasoning to the stock. when the rice is cooked mix in a nob of butter useing a forkto keep the rice light and mix in the nuts Reduce the vinegar and sugar with the quatered kumquats, untill the sharp taste of the vinegar has gone leaving a sweet and sour sauce flavoured with kumquats. Take a small savarine mould suitable for an individual portion, fill with rice, press the rice in and place upside down in the centre of a plate gently lift the mould of leaving the rice moulded in the center of the plate. If at first it is not succesful keep trying the firmer you press the rice in the mould the better. Pour the sauce around the rice arange the quatered kumquats to look neat. Garnish with sprigs of parsley.
