Ingredients:


2 teaspoons olive oil

3 teaspoons garlic

2 cups onion

1/8 teaspoon powdered saffron

1/4 teaspoon crushed red chiles

1 cup long grain rice

1/2 cup diced pimiento

1 cup tomato concasse

1 cup chicken broth
 

Preparation / Directions:


heat the oil in a heavy saucepan, over a medium flame add the garlic, heat and stir for 6-8 minutes, until golden remove and discard garlic add onions, heat and stir for 6-8 minutes, until well softened stir in the saffron and red pepper flakes add the rice, heat and stir for 4-5 minutes, until golden add the tomatoes, chicken broth or beer, and additional broth, beer, or water as needed to cover bring to a boil over a moderate flame, reduce heat to low, cover, and simmer for 15 minutes, without lifting the lid remove from heat, let stand for 10-15 minutes uncover and fluff with a fork serve hot
