Preparation / Directions:Cook rice in usual manner in boiling salted water, add egg yooks, cheese and shortening and mix all together. Shape rice into ball, first stuffing the centers with chipped cooked meat which has been seasoned to taste. Roll in flour, beaten egg and then cracker crumbs and fry in deep fat until brown. Serve with either cheese sauce or grated cheese....
