Ingredients:


1/4 cup onions -- chopped

5 ounces zucchini -- thinly sliced

1 tablespoon butter or margarine

1/3 cup canned whole kernel corn -- drained

1/3 cup canned tomatoes -- chopped

1 cup cooked rice

1/2 teaspoon salt

1 dash pepper

1 dash ground coriander

1 dash oregano
 

Preparation / Directions:


Saute onions and zucchini in butter until tender. Add remaining ingredients. Cover and simmer 15 minutes.
