Italian Rice

Ingredients:


1 quart chicken stock

2 cups arborio rice

1 medium Onion -- chopped

4 tablespoons butter -- divided

1 1/4 cups red wine

1 Cup grated parmesan cheese
 

Preparation / Directions:


Bring stock to a boil, then add rice. Simmer gently for 15 minutes, stirring occasionally. In another saucepan, saute the onion in 1 tablespoon butter until soft and tender. Add the rice, pour in the wine a little a time, and cook, stirring often for 5 to 10 minutes until the rice is tender. Stir in the remaining butter and let it melt in. Allow guests to top with grated Parmesan.
