Spicy Corn Relish

Ingredients:


2 cups fresh corn (about 4 ears scraped well)

1 cup chopped red onions

1 cup chopped red bell peppers

4 ounces drained, chopped mild green chilies

1/2 cup finely chopped celery

1 cup cider vinegar

6 tablespoons light brown sugar

2 tablespoons dry mustard (preferably Colmans)

3/4 tablespoons kosher salt

3/4 tablespoons mustard seeds

2 teaspoons garlic finely chopped
 

Preparation / Directions:


Mix all ingredients in a large, heavy saucepan over medium-high heat. Bring slowly to a boil. Lower heat to a simmer and cook, uncovered, until almost all liquid has evaporated, 30 to 40 minutes; watch carefully. In you taste relish while it is still warm, flavor may seen extremely sharp or acid. Do not worry; cooled relish will become milder. Transfer to a serving bowl. (Relish can be made 4 to 5 days ahead; cover and refrigerate.) Serve at room temperature. Makes 3 cups.
