Corn Relish

Ingredients:


2 Cup Fresh or frozen corn kernals cooked and drained

1/3 Cup Chopped zucchini

1/4 Cup Chopped sweet red pepper

2 tablespoons Chopped red onion

---Parsley Dressing:

2 tablespoons Cider vinegar

1 tablespoons Vegetable oil

1 tablespoons Finely chopped parsley

1 1/2 teaspoon Sugar

1/4 teaspoon Salt

1/4 teaspoon Chili powder

1/4 teaspoon Freshly ground pepper
 

Preparation / Directions:


Combine corn, zucchini, red pepper and red onion in medium bowl. To make dressing, whisk ingredients together in a small bowl. Add the dressing to the corn mixture. Toss to blend. Chill until serving time, at least two hours. To serve, drain salad. Place lettuce leaves on a plate and topwith a dollop of salad.
