Pasta Fagioli Pronto (Quick)

Ingredients:


2 1/2 cups pasta - usually elbows or ditalini -- (small tubes)

1 medium onion chopped

1 clove garlic or more

1 can cannellini beans

2 tablespoon olive oil - enough to saute onions

1 cup grated cheese

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


Boil just enough water to cook the pasta. Usually 1 1/2 quarts. While pasta is cooking, heat oil in a 6 quart pot. Saute onions first until translucent then add chopped garlic. Do not burn! Add beans with juice from can. This should make a thick combination. Keep this on simmer until pasta is cooked. When pasta is cooked to desired tenderness, do not drain away the water. Add pasta and enough of the water in which it was cooked to bring the soup to your desired consistency. Let this simmer for about 5 minutes to combine all the flavors. Salt and pepper to taste.
