Potato Bacon Quiche

Ingredients:


8 ounces bacon -- diced

2 large potatoes -- peeled and cubed

1/4 cup chopped onion

1/4 cup diced green pepper

1 teaspoon salt -- divided

1/4 teaspoon pepper

6 large eggs

1 cup grated swiss cheese

1 cup milk

1/4 cup buttermilk biscuit baking mix

2 tablespoons butter -- melted
 

Preparation / Directions:


1. Cook bacon in skillet until browned and crisp. Remove bacon and drain on paper towels. Pour off all but 4 tablespoons bacon fat from skillet.

2. Cook potatoes, onion, green pepper, pepper and 1/2 teaspoon salt in bacon fat until potatoes are tender, but not mushy, about 15 minutes. Remove from heat and stir in bacon.

3. Beat together eggs, cheese, milk, baking mix, butter and 1/2 teaspoon salt.

4. Pour egg mixture into greased quiche dish or 5 x 9-inch baking pan. Spoon potato mixture on top of eggs.

5. Bake at 375 degrees for 20 to 30 minutes or until set. To serve: Cut into wedges.
