Ingredients:


2 large eggs

1 Cup milk

1 Cup flour
 

Preparation / Directions:


Grease an iron skillet with corn oil. Preheat the oven to 450. Blend above ingredients in a blender and pour them into the skillet. Bake 20 minutes, turn the heat to 350, and bake another 15. During cooking it puffs up and later falls. This is normal. Historically it was stuck under a roast to catch the drippings. Variations ---------- Cinnamon and nutmeg in the batter make a good dutch pancake, served with a little honey, fresh berries and lemon squeezed over the top.
