Monterey Jack Bread Pudding - Complete Dessert

Ingredients:


3/4 cup light brown sugar -- packed

1 1/2 cups water

1 stick cinnamon

1 whole clove

3 cups white bread cubes -- toasted

3 cups apples -- peeled and thinly sliced

3 cups seedless raisins

1/2 cup blanched almonds -- chopped

1 cup shredded Monterey jack cheese -- (4 oz.)
 

Preparation / Directions:


1. For syrup, combine sugar, water, cinnamon and clove. Bring to a boil and simmer 15 minutes; set aside. 2. Cover bottom of a buttered 2-quart casserole with a layer of toasted cubes; add a layer each of apples, raisins, almonds and cheese. 3. Repeat until all ingredients are used, reserving 1/4 cup cheese. 4. Remove cinnamon and clove from syrup; pour syrup over all. 5. Cover casserole; bake in preheated 350 F. oven 30 minutes. 6. Uncover; sprinkle with reserved cheese. 7. Bake an additional 15 minutes; serve hot.
