Blueberry Flummery

Ingredients:


2 tablespoons cornstarch

1/2 cup sugar

1 1/2 cups water

2 1/4 cups dry-pack frozen blueberries -- rinsed and drained

2 tablespoons grated rind and juice of 1 lemon

1 teaspoon lemon peel -- (for garnish)

1/2 cup heavy cream -- (optional)
 

Preparation / Directions:


1. Combine cornstarch and sugar; stir in water, blueberries, lemon rind and juice. 2. Cook over low heat, stirring until flummery bubbles and thickens. 3. Spoon into sherbet glasses; chill. 4. Garnish with twist of lemon peel; serve with heavy cream, if desired. NOTE: It is said that Flummery, an innovation of the Shakers, grew out of the love and attention they traditionally gave to their older members. They developed special diets and special dishes for the aged. Easily mouthed and digested, Flummery was one of the favorite desserts.
